Chorizo Tortellini Soup

Several types of sausage, including Carolina Pride mild and hot pork sausage, make this soup filling and flavorful.

Ingredients
Chorizo
- 1 lb. Carolina Pride Mild Pork Sausage
- 2 Tbsp. chili powder
- 2 Tbsp. garlic, minced
- 2 Tbsp. onion powder
- 1 Tbsp. ground pepper
- 1 Tbsp. oregano
- 2 tsp. ground cumin
- ¼ tsp. ground cloves
- 1 tsp. ground coriander
Soup
- 1 lb. Carolina Pride Hot Pork Sausage
- 1 lb. chorizo (see recipe below)
- 1½ onions, chopped
- 4 Tbsp. garlic, chopped
- 48 oz. whole peeled crushed tomatoes
- 80 oz. chicken broth
- 1-3 Tbsp. sriracha sauce (depending on your heat preference)
- 1 pkg. cheese tortellini
- 1 cup heavy cream
- 1 small bag spinach
- 2 Tbsp. ancho chili pepper
- Salt and pepper to taste
Directions
Make chorizo: Mix all chorizo ingredients and let sit for at least 6 hours; overnight is best. In large soup pot, cook chorizo and hot sausage until browned; add garlic and onion. Cook until onion is soft. Drain grease. Pour in tomatoes; add broth and sriracha. Bring to a boil, reduce heat to simmer and cook 20-30 minutes. Cook tortellini according to package directions. Add to soup, along with cream and chili powder. Add salt and pepper to taste. Stir in spinach and let sit 10-15 minutes before serving.
